An easy crowd pleaser, especially on those nights when you’re running out the door!
Ingredients:
8 large flour tortillas
2-3 bell peppers
1 onions
1 can of corn (drained)
1-1.5 pounds of ground beef
1 packet of taco seasoning
1 can refried beans
Mexican blend cheese
2 tbsp olive oil
Optional: Sour Cream Lime Salsa
Directions:
1. Preheat oven to 425
2. Heat olive oil in skillet pan while you chop all your vegetables
3. Cook peppers and onions until almost soft
4. Add corn for last minute of cooking
5. Remove cooked vegetables from pan and set aside.
6. Brown ground beef. Drain if needed
7. Season ground beef according to directions on the taco seasoning packet.
8. Lay out 7 tortillas on the cookie sheet
9. Layer quesadilla filling: refried beans, ground beef, vegetable mixture, cheese.
10. Close up quesadilla
11. Place second cookie sheet on top and place in the oven for 20 minutes. Remove top cookie sheet and cook for an additional 10 minutes.
12. Cut and enjoy!
Optional:
1. Zest and quarter a lime
2. Squeeze lime juice into a bowl
3. Mix lime juice, lime zest, and sour cream until desired flavor and consistency
