Easy Family Meals for the Summer Schedule

Who doesn’t want easy family meals for those busy summer schedules?  Whether you’re driving to and fro from camps, having lazy days by the pool, or lounging around at home, having easy meals ready to go is a must!

Barbecue Chicken Nachos

Tips:

  1.  Use parchment paper on a sheet pan for easy cleanup.
  2. Substitute pre-packaged pulled barbeque pork for a fast swap.
  3. Divide the sheet into sections so that everyone can choose their own nacho toppings.

Ingredients:

Bacon Bits

Shredded Chicken or BBQ pork

Pepper Jack Cheese

Corn

Black Beans

Corn Tortilla Chips

Green Onions

Instructions:

  1. Preheat oven to 350 degrees
  2. In a 13 x 9 sheet pan layer your tortilla chips, bacon bits, corn, black beans, meat, and cheese.
  3. Cook for 10 minutes, or until the cheese is melted.
  4. Optional: Top with green onions.

Perfect Chicken

Ingredients:

3-4 chicken breasts

2 TBSP olive oil

Perfect Chicken seasoning packet

Instructions:

  1.  Preheat oven to 365 degrees.
  2. Drizzle olive oil on both sides of the chicken.
  3. Sprinkle Perfect Chicken Seasoning on both sides of the chicken.
  4. Bake 20 minutes, or until the internal temperature reaches 165 degrees.

*Pairs well with homemade fries seasoned with the French Fry Seasoning Packet. 

Sheet Pan Pancakes

Tips:

  1.  You can use any premade mix to make this a quick meal!  We like Hungry Jack pancake mix.
  2. Everyone can choose their own toppings.

Ingredients:

Pancake Mix of choice- we like Hungry Jack, you just add water

Pancake toppings (fruit, chocolate chips, etc…)

Melted butter

Instructions:

  1. Preheat oven to 350 degrees.
  2. Prepare pancake batter as usual.
  3. Pour batter onto sheet pan.
  4. Top with your preferred toppings.
  5. Bake for 20 minutes.  Brush with melted butter while warm and serve.
